Chocolate Orange Cake

Chocolate Orange Cake

Had a friends birthday party last night and she loves chocolate cake, so I thought I’d put a bit of a twist on the normal chocolate orange cake.

Ingredients

Chocolate Cake:
2/3 cup Milk
¼ cup good coco
2 Tbs Drinking chocolate
1 tsp Vanilla Essence
75g Butter
½ Cup sugar
1 & ½ cup SR Flour
1 tsp Baking soda
1 tsp Baking powder
2 Eggs

Orange Cake:
75g butter
2 Tbs orange Zest (approx 3 oranges)
1 cup Orange juice
1 & ½ cup SR Flour
½ cup Sugar
1 tsp Baking soda
1 tsp Baking powder
2 Eggs

Meringue:
4 egg whites
½ cup Caster sugar
1 tsp corn flour

Method
Start by baking the two cakes separately and allowing to cool.
pre heat oven to 180˚C (fan forced) and grease 20cm round baking dish.

Chocolate Cake
Melt butter with milk, coco, and drinking chocolate in a small saucepan, and allow to cool.
In a bowl beat eggs until pail and fluffy, add sugar and beat again.
Mix in half the flour and then add cool chocolate butter mix.
Mix in the rest of the flour, baking soda, and baking powder.
Bake for 30 mins or until skewer comes out clean

I find it best to use the same baking dish twice so I know that both cakes will be the same size.

Orange Cake
Melt butter with zest, and half the juice in a small saucepan, and allow to cool.
In a bowl beat eggs until pail and fluffy, add sugar and rest of orange juice and beat again.
Mix in half the flour and then add cool orange butter mix.
Mix in the rest of the flour, baking soda, and baking powder.
Bake for 30 mins or until skewer comes out clean.

once both cakes are cool cut each in half and set the bottom of the orange cake on a plate. Make meringue and spread over the cake and place the bottom chocolate layer on top. continue this way until there is no cake left. You may need to trim the top of the cake to make it flat and stack properly.

Then cover the cake in the rest of the meringue and wisp up by sticking and lifting a spatular on and off the cake.

Meringue
beat egg whites in a clean dry bowl with clean dry beaters until you form stiff peaks.
Gradually add sugar, and beat until dissolved.
fold in cornflour.
