Hot Chocolate Muffins
As winter is coming along (in Australia) and I managed to get my hands on a free pack of marshmallows I thought what better to do than make a muffin that’s just like a hot chocolate. I’ve had a bunch of birthdays lately so made them mini muffins, but I think they would be awesome made in small mugs.
125g butter, soft
1tsp vanilla essence
2/3 cup caster sugar
¼ cup good quality coco
1 ½ cup Self raising flour
¼ cup milk
100g milk chocolate (eating chocolate, not cooking chocolate)
1 bag of white marshmallows white, you could use marshmallow fluff as alternative.
add 1 tsp baking powder for altitude
cream butter and sugar, and then slowly add the eggs, vanilla and milk.
sift in flour and coco, and stir until all combined.
scoop mix into muffin tin and then push in 1 or 2 pieces of chocolate (the bigger your muffins the more you will need in each one)
bake at 180˚C (350˚F) for approx. 15 mins or until skewer comes out with no batter on it (it will have chocolate on it).
In a small pan heat marshmallows on low until melted but not browning.
Spoon out a small glob of marshmallow onto each muffin (this is the tricky bit, if using marshmallow fluff, there is no need top melt it)
Dust each with coco, just like you would a hot chocolate.
These are best enjoyed warm so the chocolate inside is still melted.
