Well there are only 35 days until Christmas, and this year I’m getting the best present of all. My brother is coming home!! (ok not for Christmas Day, but for two weeks, and we’re having some Christmas celebrations whilst he’s here). So I’m starting a little earlier on my baking…
Get ready, there is lots to come including more baked goods to give as gifts this Christmas and an exciting gingerbread house!!
Gold Speckled Chocolate Cinnamon Meringue biscuits
4 egg whites
1 cup caster sugar
1/2 tsp cream of tarter
1/4 cup coco
1 tsp cinnamon
1 tsp corn flour
Whip egg whites to form stiff peaks, add cream of tarter and gradually add the sugar. Continue to whip until all the sugar is desolved.
Sift together coco, cinnamon, and flour, and gently fold in.
Pipe out your meringues. Bake at 120 for 40 mins or until hard and they easily peel off the baking sheet.
Once cool, mix enable gold luster dust with some food grade alcohol and splatter over meringues using a food only paint brush.
