Vanilla Chai Spiced Honey Cake

I was lucky enough to head up to Byron Bay for my birthday this year. Along with lots of wonderfully warm beach time, some great markets, and lots of delicious seafood, I made this delicious Vanilla Chai spiced Honey Cake.

It was so easy to make and absolutely delicious. I substituted strong spicy chai tea for the expresso as I’m not a fan of coffee and passed on the pistachio’s (not because I wanted to, I just couldn’t find any in small quantities).

Banaba Byron BayIngredients

1 cups plain flour
1 teaspoons baking powder
1 pinch salt
2 teaspoons ground cinnamon
1/4 cup butter
1/2 cup honey
3/4 cups caster sugar
2 eggs
teaspoon vanilla extract
1/4 cup strong Chai tea cooled

Decorations

100ml whipping cream
100g mascarpone
4-5 figs,
Honey for drizzling

Method

Cream butter, Honey and sugar. Add vanilla and cinnamon and continue to beat. Add eggs one at a time and mix until well combined.
Alternate between adding the remainder of the dry ingredients and the tea.

Once combined pour into a prepared 6″ round tin and bake at 180˚C for 50 mins

To decorate

Whip Cream and Mascarpone together until they form soft peaks, spread onto cake. top with figs, then drizzle over as much honey as you want.
