There are only 12 days to go until Christmas and I’m so excited. The tree is up, some of the presents are wrapped, and my Christmas baking has just begun.
Why not start with something easy and delicious (even if your not a huge fan of Christmas pudding) truffles.
Ingredients:
1 cup mixed dried fruit. I use cranberries, saltanas, and Rasins.
1/4 cup roughly chopped almonds
2 TBS of Cherry
200g good quality white chocolate
150ml thickened cream
Icing sugar to dust
Method
Mix fruit, nuts and diced chocolate in a bowl.
Over medium heat, heat cream and sherry until just boiling then pour over chocolate fruit mix.
Leave for a few minutes then stir until well combined.
Leave uncovered in fridge overnight, or until hard.
With a teaspoon roll small balls between your hands then roll in icing sugar. If you think it might be too sweet, mix some corn flour in with your icing sugar.
They may need another dusting if the mixture is a bit warm.

Just the recipe I am sure will be a great success for gift giving! Will be making up a batch leading up to the festivities. ..will try hard not to nibble away too.many before wrapping!
